Catching up on a beautiful day


I spent the day with my friend Kaitlin, who moved to Melbourne earlier this year. We had lunch at Uncle Joe's on King Street in the city and then walked around, enjoying the sunshine. This is my favourite time of the year in Perth. The weather is absolutely perfect!

Making a RAW Cake for the first time!


For my birthday I made a raw cake for the first time. My family enjoyed it so much we now will have raw cakes for all of our birthdays. 

I am calling it the....

Raw Spiced-Apple-Walnut Cake with Cherries

Those were the flavours that we tasted the most.

This was definitely an indulgent cake, but it was my birthday so why not?! 

What you will need:
Food Processor

Crust
1 cup walnuts
2 (small) cups dried dates (soaked in water)
1 small green apple (for the tart taste)

Step 1. Put slices of apple in the food processor until fine pieces result.

Step 2. To the apple pieces, add in the walnuts and dates; process until a paste forms.

Step 3. Line a SPRINGFORM pan with baking paper and lightly oil the sides. Spread the crust paste evenly and put the pan in the freezer while you make the second layer. (Use a springform pan for easy serving).

The 'flavouring' mixture
1/2 cup crushed walnuts
A dash of vanilla essence
1 tsp cinnamon
Juice of 1/2 a lemon
1 tsp orange zest

Step 4. Mix all of the flavouring ingredients well in a separate bowl.

Creamy Layer
2 frozen bananas
1/2 cup frozen cherries (if you buy fresh, be sure to remove the stone before freezing)

Step 5. Put the bananas and cherries into the food processor. Process until combined.

Step 6. Add the flavouring mixture to the creamy bananas and cherries and process until smooth.

Step 7. Put the creamy layer directly on top of the crust. (I did not do this initially but would recommend it).

Step 8. Freeze overnight.

Serving:
I suggest to allow the cake to 'thaw' for about 5 minutes before removing the sides of your springform pan.

I decorated the cake with frozen and fresh cherries. 

Cut the cake using a warmed knife.

This cake is very sweet so small slices are best. This cake is raw but don't eat the whole thing by yourself in one sitting :)
